Green and Yellow Vegetables and Vitamin A



VitaminA activity of plant provitamin A carotenoids is uncertain. A research group studied whether plant carotenoids can sustain or improve vitaminA nutrition during the fall season in Kindergarten children in the Shandong province of China. The result of this study showed that carotenoid nutrition improved after consumption of green-yellow vegetables.

Their conclusion is green-yellow vegetables can provide adequate vitaminA nutrition in the diet of kindergarten children and protect them from becoming vitaminA deficient during seasons when the provitamin A food source is limited.
